Why the meal it preselects depends on where you are

When you log a meal, the app has already picked breakfast, lunch, dinner or snack before you type anything. Which hours it picks from are your country’s, not ours.

One set of hours cannot serve ten languages. Take the obvious ones, the hours somebody in Belgium would write down: before 11:00 breakfast, before 15:00 lunch, before 21:00 dinner, snack after that. They would offer a Spaniard dinner at 15:00, and tell a Norwegian eating middag at 16:30 that it was lunch. So the app does not use them.

Where the hours come from

Eurostat's Harmonised European Time Use Surveys ask people to write down what they were doing in each of the 144 ten-minute slots of a day. Eurostat publishes, per country, the share of the population eating in each slot (dataset tus_20startime for the round collected around 2020, and tus_00startime for 2000 and 2010). That gives a curve of meal times with three peaks in it, and the peaks are never in the same place twice.

In France’s 2010 diary data, 50.0% were eating or drinking at 12:30. Spain's largest peak is at 14:30 and reaches 39.9%. Norway's evening peak is at 17:30 and never gets above 13.6%, because Norwegians do not all eat at the same time. Drawn from the published diaries rather than from a smoothed copy, so the peaks in the key are the peaks in the data. The table below and the meal times the app ships are read off these same curves.

Each window in the table below is one of those peaks, widened until the curve drops to 65% of the peak. It stops at the quietest slot between two meals and never goes more than 90 minutes either side. Then it is rounded to the half hour. The diaries are kept in ten-minute slots, so the unrounded answer for Belgium is 07:10 to 09:40. Printing that would claim a precision nobody has: a few thousand diaries from 2010 do not know your breakfast to within ten minutes. Anything outside all three windows is a snack, which is most of the day. Your country comes from the time zone your phone reports, so we never ask.

These are the windows the app uses, not a description of them: this table and the app are built from the same Eurostat figures in one step, so they cannot drift apart. A page saying “these hours come from diaries” while showing hours that no longer match the app would be worse than having no section at all.

A row that does not name a Eurostat round has no diary in that dataset, and carries a peak read off something else. Four of them — the United States, Canada, Ireland and Denmark — come from Martín-Olalla & Rodríguez-Sánchez (2018), Table X, which reads the same figure off national time use surveys for 19 countries. That paper is also the best evidence that these differences are real rather than noise. Dinner falls about three hours after winter sunset, in a band one hour wide. That band is 40% narrower than the spread of dinner clock times. This is a cross-country association in the surveyed populations, not proof that sunset determines an individual’s meal time.

The rest are national surveys outside Europe, added one at a time because that paper cannot reach them: it covers 19 countries between 38° and 61° of latitude, so it has nothing to say about anywhere nearer the equator. Portugal comes from IAN-AF 2015-2016, which puts breakfast at 8h, lunch at 13h and dinner at 20h for 6,553 people — and lands next to Italy rather than next to Spain, which is the sort of thing you would get wrong by guessing from a map. Indonesia comes from the Indonesian Food Barometer, 1,665 adults across six provinces, at 07:00, 12:00 and 19:00. Taiwan comes from a time use survey, the DGBAS one, whose lunch is the sharpest in this table: 84% reporting lunch within the specified one-hour period, a different measure from the ten-minute participation rates above. Brazil is the odd one out, because we did not find a published eating-by-clock-time table — the national survey records the time of every meal and its reports never tabulate it, so those windows are computed here from the raw POF 2017-2018 microdata, 46,164 people.

For the United States, the USDA's Economic Research Service reports from the 2022 American Time Use Survey. Eating and drinking as a main activity peaks between 12:00 and 12:59 and again between 18:00 and 18:59. About 3 in 10 people are eating in each. Our US row fits inside both.

The evidence against, and what this is not

This says nothing about whether the time you eat is good for you. It is a default in a form. Whether meal timing affects health is a real and disputed field of research. We have not read enough of it to have a position, and a meal logged at 03:00 is filed as a snack, nothing more.

Several diaries are old. Latvia, Lithuania and Slovenia are from the 2000 round; Belgium, Spain, France, Italy, Greece, Luxembourg, Romania, Turkey and the United Kingdom are from 2010. Habits change. Where a country appears in more than one round we use the most recent, which is why the 2020 round is used for eleven of them.

“Eating” in a diary includes drinking, so a country that spends its morning with coffee has a long, low morning rather than a peak. That is exactly why the window is cut at 65% of the peak rather than at half of it. At half, the Dutch morning ran into lunch and the Finnish evening covered six hours. The 65%, the 90-minute limit and the rounding to half hours are engineering choices we made by looking at the curves, not findings. The rounding moves an edge by up to a quarter of an hour, which is less than the difference between two survey rounds of the same country.

A national average is not a person. Shift workers, students, anybody fasting, and anybody who simply eats late are all inside these numbers and none of them is described by them. Living in Madrid does not make your habits Spanish either. All of this is one preselected chip you change with one tap. Nothing overrides your choice afterwards, not even the analyser. A plate of pasta at 13:00 once came back as “dinner” and overwrote a correct lunch.

The hours are read against the photo’s clock, not yours. A picture carries the moment it was taken, so a plate photographed at 09:14 and logged at ten at night is still breakfast, and it is filed at 09:14 on the day it was eaten rather than at the moment you got around to typing it. The only thing read out of a photograph is that timestamp: never the location, which sits in the same metadata and is not looked at. A picture that carries no timestamp — a screenshot, anything out of a chat app — falls back to the clock, exactly as before.

Eight countries are derived rather than measured. Table X publishes peaks for employees on a weekday, who eat earlier than everybody else, so the four rows taken from it carry a correction: the median gap between employees and everybody else in the four countries the paper reports both for, 38 minutes at breakfast and roughly nothing at lunch and dinner. A median of four pairs is thin evidence, and it is the weakest number on this page.

And every derived row borrows a shape it did not measure. A published peak is one number; a window needs a width, so these rows take the average width of the measured European ones and wrap it around their own peak. For Canada that is a small claim. For Indonesia it is a larger one, and in Taiwan's case it is visibly wrong in a known direction: its own survey reports lunch as extremely concentrated and breakfast as spread out, and the borrowed shape draws them the other way round. It is still closer than the European peak it replaces, which is what these rows are competing against.

And most of the world is still not in here. There is no row for Japan, Australia, Nigeria, or most of Asia, Africa and Latin America. Everyone there gets the average of the 23 measured European countries, which is a schedule nobody actually keeps and may poorly fit habits elsewhere.

Four countries are missing on purpose, which is worse. We went looking for China, India, Bangladesh and Mexico and decided not to add them. Not because there is nothing published, but because what is published is not a sample of a country: the Chinese clock-time studies we located sampled airline shift workers and sports students, India's from a 94-person study in Delhi and two online questionnaires, Bangladesh's from sixteen adolescent girls whose evening meals were never actually observed, and Mexico's from 379 women in Mexico City surveyed by telephone during the pandemic. Mexico's national time use survey cannot help either: it asks people to total up their week rather than keep a diary, so it never records what time anything happened. For India in particular we are fairly confident the current default is wrong — three unrelated studies all put Indian dinner later than our fallback window closes — and we would still rather be visibly wrong than invent a number that looks sourced. These searches do not establish that no suitable national data exists.
